2 1/4 cups cashews (or 3/4 cup of 3 different kinds of nuts)
4 T. sugar
1 1/2 t salt
1 tsp pepper
1 1/2 tsp cinnamon
1 pinch clove powder
1 tsp curry
1 pinch cumin
1 tsp oil
Bake nuts @ 350 for 5-10 minutes. In a bowl, mix all other spices. In a large skillet, mix all nuts and cook at medium heat until sugar melts and coats nuts. Shake skillet often. Oil a large baking sheet. Spread nuts out to cool.
*I spread them on large pieces of tinfoil instead so i could pick them up and move them when i needed to. The sugar/spice mix will not stay on the nuts completely, so when you store them, I suggest storing them in a ziplock bag so you can still dig out some of the spice part with the nuts if needed. We really liked this one b/c of the sweet and salty mix together.
i just re-made these today and after baking the nuts, i then sprayed them with oil in order to help the spices stick. this seemed to really help, so maybe try that before adding the spices to the pan to get the sugar melted. i stirred constantly and even before the sugar melted, the spices were sticking slightly to the nuts b/c of the oil. Enjoy!
