5 cucumbers, thinly sliced (more, if they are the short ones here in Mada. I think I used about 8.)
350 g onions, sliced
5 green peppers, sliced (red bell peppers are nice, if you can find them)
50 g salt
1/2 tsp turmeric
350 ml apple cider vinegar
350 g sugar
2 Tbsp mustard seeds
2 Tbsp celery seeds
1/4 tsp cayenne pepper OR 1/2 – 1 tsp crushed dried chilies
Slice the vegetables and mix them with the salt. Let stand for 3 hours, and then drain the liquid. Rinse with cold water, and drain again.
Combine the vinegar, sugar and spices and bring to a boil. Add the vegetables and bring to a simmer. Cook for 2 minutes. Pour into clean jars and store in the refrigerator.
I got this recipe from an Australian website, so I use my kitchen scales to do the grams. 🙂 These are sweet and slightly spicy (you can make them as spicy as you like), and I love them. Nobody in my family eats them but me so they are my treat. 🙂 I’ve never had them go bad and I think they would keep for several months in the fridge.
